Rising Phoenix Green

This tightly rolled green tea has a lovely chestnut-y aroma. Its flavor lingers with a long sweet finish. Because green teas have little processing they tend to be subtle. This one is full of flavor without being bitter or astringent. With it's full flavor profile, it is a great one to have multiple infusions. I love to watch the tea leaves unfurl from their tightly rolled balls. It's so relaxing to watch the different journeys the tea leaves take on each infusion. I really enjoy this tea steeped at 186°F as well as a cold steep. Quite the versatile cuppa.

A delicious tea from Guizhou Province. This province is in a beautiful subtropical area of China well known for its fine teas within China. It is a rare treat to find these teas outside of China. One wonders if the tea maker was inspired by Tie Guan Yin when this green tea was first made. Heavier rolling – – in the style of a Tie Guan Yin – – means a sturdy tea for multiple infusions. As with most Guizhou Greens, the flavor is rich yet silky. The aroma is prominent once the tea is poured, with elegant vegetal layers in the cup, not bracing nor astringent.


If serving this tea iced, consider using an extra 1 1/2 teaspoon of tea for every 6 – 8 ounces of water to provide more flavor. Melting ice will dilute the blend. You can also cold steep to maximize the flavor by filling a pitcher with the appropriate tepid water. Add the suggested amount of tea leaves either in a tea bag or an infuser and put the pitcher into the refrigerator for approximately 1 1/2 hours. Taste the tea and if it’s to your liking, remove the tea leaves and serve.

(1 1/2 tsp (6 gr) to 6-8 oz water)
3-4 minutes @ 176 - 186°F

Eastern Infusion:
(1 1/2 tsp (6 gr) to 3 oz water)
20 seconds at 186 ℉, add 20 seconds to each infusion
