This elegant clear cuppa invokes special wintertime memories of the aroma flittering through the cold air from the chestnut stands in NYC and Germany. I love how the roasty nuttiness pairs with the delicate green tea. Though delicate, the flavor holds up to ice and is delicious served cold.

From the beginning of the pour the chestnut aroma prepares your palate for the fruity nut notes this green tea offers. The dry leaves are finely wound into what is commonly referred to as “eagle claws”. During the Ming Dynasty, this tea was named “Ian Xue,” or Orchid Snow. This is an elegant cuppa delivering the best of green teas with clarity.

From Zhejiang, near Shaoxing, a place known for its “yellow wine,” the nearby mountains are the backdrop for this tea. High peaks are surrounded by pine and bamboo, and ever present clouds provide humidity that coaxes fat buds from tea bushes. Picked around the Qing Ming festival, the pluck is a bud and a leaf. The kneading which shapes the leaves is done over a warm pan, at 158 – 176℉.
