Lapsang Souchong

TeaCha's Notes:
I searched long and hard to find a Lapsang Souchong that has just the right amount of smokiness. Some I find are too smoky and you cannot taste the tea. I love this cuppa in the winter time or anytime I want to pretend I'm relaxing by a crackling fire. As a bit of tea trivia, there are also Lapsangs that are not smoky.

Lapsang Souchong, an epically historical smoky black tea. This tea is delightfully smoky, hardy and bold. The smokiness is not overpowering but definitely dances brilliantly. Generally served hot, this tea is great anytime. It’s also great to add to your favorite smoked meat and fish recipes or as a secret ingredient for sauces.

Lapsang is one of the earliest Chinese teas ever to be exported to Europe. The tea is from northern Fujian, the only true authentic origin. The finished tea leaves are laid out in baskets on a lattice floor in a large building with two or three levels to allow the scenting of the leaves. On the lowest level, the pine needles are heated. The smoke wafts to the upper floors to naturally scent the black tea leaves. The scenting process takes about two to three days. No flavoring is added. Limited quantities are produced each season due to the small garden area in Wuyi.
