Alishan Oolong

My tea tasting palate tends to gravitate to higher elevations for my personal teas. This Alishan mountain oolong is from a beautiful mountainous area in Taiwan. Lighter oxidized (25%) with creamy floral notes it's incredibly smooth and full of hugs. I have to say this might be up there with my all time favorite oolong, True Cream Golden Bud oolong, no longer available. I am ecstatic to find this oolong and share it with you.

This Alishan oolong is perhaps the best known among Taiwan’s high mountain teas. Picking and processing are done only in winter and spring. Due to the limited workforce in the area, the yield is limited each year. Oxidized at only about 25%, the cup remains quite green, yielding a natural delicate floral note. If time permits and you can steep it in a Gawain (Gongfu style), use 7 grams of tea to about 4 oz of water, steep for 1 minute for the first brew, and then 2 to 3 minutes for the subsequent infusions.

Western Infusion:
(1 1/2 tsp (6 gr) to 6-8 oz water)
2-3 minutes @ 196°F
Number of Western Infusions: 2
Eastern Infusion:
(1 1/2 tsp (6 gr) to 3 oz water)
10 seconds at 196℉, add 10 seconds to each infusion
Number of Eastern Infusions: 4+
