Description

Naturally sweet floral and a gentle hint of spice dance in this yellow tea, inviting sip after sip. The dry leaves have notes of cocoa. Wet leaves create a sweet woodsy aroma.

Yellow tea is processed similarly to green teas with an additional step, “sealed yellowing.” It’s a process where the tea is encased and steamed removing the grassiness associated with green teas. The tea is allowed to oxidize at a slower rate producing a lovely mellow cuppa. Simao’s processing takes 24 – 30 hours which makes the tea less green on the spectrum than most “yellow” teas. This yellow tea cultivar is also used to make green and back tea. Only recently, the last 10 years or so, yellow tea processing was developed.  Somewhat similar to oolong, there is quite a range of flavor, from more green tea lighter characteristics moving to a more complex cup. The dry leaves are brown and the cup is orange. High quality raw tea is used to make Yellow teas and processing is more labor intensive.

 

Recommendation:

If serving this tea iced, consider using an extra 1 1/2 teaspoon of tea for every 6 – 8 ounces of water to provide more flavor. Melting ice will dilute the blend.

(1 1/2 tsp (6 gr) to 3 oz water)
10 secs @ 176℉, add 3 seconds to each infusion

    It’s…different. It’s not white, it’s very similar to Oolong, but it stands on its own. I forget just HOW GOOD IT IS …. and then I take the first sip and am reminded JUST why I purchase it. It’s got taste and texture that is familiar and it’s own simultaneously.

    I’ve never tried a yellow tea before but this one is tasty. To me it tastes a lot like a black tea but much more mellow and delicate with a slight floral undertone.
