A beautiful organic Ceylon black with a mild but spicy flavor that pops. I love that this is from small family run farms. Ahinsa relates to the Sanskrit term “Ahimsa” meaning ‘non-violent’ and the tea farmers produce tea in a way that respects humans, animals, plants and the environment.

More than 185 farmers and a very ambitioned management have been offering organic qualities for more than 20 years. Limited quantities as the suppliers are mainly small, family-run farms. The tea fields are located in the south-western part of the island, almost at sea level. Mainly green and black teas, but also some white varieties are produced and marketed here. The quality of this variety comes very close to the teas offered in the northern districts around Kandy with a rather strong, spicy cup.
Recommendation:
If serving this iced, consider using an extra 1 1/2 teaspoon of tea for every 6 – 8 ounces of water to provide more flavor. Melting ice can dilute the blend.

Western Infusion:
(1 1/2 tsp (6 gr) to 6-8 oz water)
4-5 minutes @ 203-208°F
Number of Western Infusions: 1
Eastern Infusion:
(1 1/2 tsp (6 gr) to 3 oz water)
10 seconds at 208℉, add 10 seconds to each infusion
Number of Eastern Infusions: 3+
